If you are anything like me, you may like (I love) cookbooks! Sooo, let’s talk cookbooks! The first plant based cookbook I looked at was America’s Test Kitchen, The Complete Plant Based Cookbook. It was a revelation! I highly recommend it! There were recipes in this book that I thought, hmm, how can this possibly taste like what it says it will be? I was amazed! One of the first things I made was a cheese-less cheese sauce. This was totally non-dairy, and better than the real stuff! It was made with potatoes! It was great! A couple of my favorite recipes are the Portobello Mushroom burgers, and the Tomato Tart with Cashew Ricotta Artichokes. The next cookbook I got under my belt was Charity Morgan’s, Unbelievably Vegan, and yes, it is unbelievable! Charity’s cooking was featured in the documentary “The Game Changer”. This cookbook truly has some amazing stuff in it too! I love the Shitake Mushroom Bac’n. This stuff is addictive and a great staple to have on hand for a BLT! Below are some other great cookbooks:

- The Engine 2 cookbook, this is by Rip Esselstyn and stems from the Forks Over Knives viewings, and he also has The Engine 2 Diet cookbook.
- The How Not to Diet cookbook and The How Not to Die cookbook, both by Michael Greger
- The Plant Pure Nation cookbook by Kim Campbell, this is from the Plant Pure Nation documentary.
You may recognize the Esselstyn and Campbell names from ground breaking studies on the effects of plant based eating on the prevention, stopping, and reversing of diseases such as cancer, heart and vascular disease, and diabetes. Not to forget the China Study, published by T. Colin Campbell.
I hope that these cookbooks can help you in your transition into plant based eating. And, of course, the internet is a great source for recipe searches. It is all experimental based on your taste buds, but hopefully, this gets you going in the right direction and helps you build your plant based pantry!
