Hello! Welcome to my journey. Hmm, How did I get here, and where am I going? Let’s start from the beginning!
A while back, a dear friend was talking to me about improving health and that he was listening to an audio book, “How Not to Die”, by Michael Greger. The book was an introduction to him about the benefits of Whole Food Plant Based eating.
You cannot imagine what was going through my mind having been raised in Texas, lived in various places around our great country, and now back in Texas. In Texas, we eat meat, period. There have been times I would smoke 50 lbs of meat a week to feed the masses, well, meat! I had jumped on the Keto wagon starting with Adkins diet over 20 years ago. Where had that gotten me you ask? Well, still struggling with my weight, and a slow health progression to try to improve my health so that I could continue my over the counter and prescription drug free life, free from modern day “Pharma”. Ok, so I thought, I will listen, as I greatly value my friend and his journey, as well, I always try to stay open minded and learn.
I tried to be supportive of his direction, it was a struggle for a couple of weeks or slightly longer, but one day I thought, maybe I should just see what this is about for myself. He had mentioned several documentaries, so I asked again about them, and he sent me a list of a few.
I watched my first, “The Game Changer”. This was a literal game changer for me. I thought, “Oh my gosh, what have I done to myself in the name of “health” over the last 20+ years??? I sent my friend a text and said, I am in. I cleaned out my fridge, my freezer, pantry, cupboards, and anything else that was not in the name of Plant Based foods. I really didn’t have much left, and many neighbors benefitted from my purging. I truly did not realize how much food I had stockpiled! Especially meat!
Then a day or so later, I watched “What The Health”, same message, new information. It just reinforced my decision. So now what? I am not a big “VEGGIE” eater. What do I eat? Salad? Ugh! I need a cookbook! I love to cook, and try new things, and to be honest, I had become somewhat bored with cooking. Then I thought, oh no! How am I going to drink my coffee without my delicious heavy cream?? That was my first journey, finding a tolerable substitute. Thank goodness for the internet! I “googled” a simple recipe to make my own alternative plant based heavy cream. Now, I needed ingredients, it is simple, remember…so I didn’t need much. Cashews (I have found these to be a pretty major staple in my plant food kitchen). I already had some vanilla unsweetened almond milk, and or water (it magically appears from my faucet on demand), and some table salt. Well, I tried it with the almond milk, not bad, but not what I wanted, exactly, the vanilla made a taste I wasn’t thrilled about in my coffee, I do love the taste of vanilla in foods, but not my coffee. Then I tried with just water, nope, that didn’t work. So I tried almond milk without vanilla, just unsweetened original. It was evolving in the right direction. Then a friend offered some oat milk, it was a little more neutral than the almond. Again, closer. So I tried with half oat milk and half water, oh so much better, but it wasn’t creamy like I wanted. Then I tried extra creamy oat milk and water with about a 50/50 ratio to each other. Success! It was close enough, and I could again enjoy my coffee.
So this will be our journey of documentaries that may be of benefit, various cookbooks that can help with that plant food growth, as you too discover your health journey and the benefits, and just experimenting with change, to get it right for you.
